Tasting Note
Sight: Spectacular amber red color.
Smell: Elegant and deep vegetable dabs with classic herbal dabs of vermouth: gentian, iris root, licorice, angelica. Also, it has rusting and PX wine dabs.
Taste: Delicate bouquet. Pleasant entry in which the bitter dabs stand out. They are balanced with the acid and sweet hints of the vermouth. Also, it has classic dabs such as sweet and bitter roots mixed with spices, herbs and flowers. We feel spiced bouquets that reminds us of gentian, angelica, herbs such as thyme and flowers such as chamomile. At the end stand out the Jerez wine and the rusting with a bitter point and balsamic licorice dabs.
Preparation
For 2 months a secret mixture of different hersbs (Oregano Dictamus, Artemisa Pontica, Gentian...) are macerated with alcohol. After this time, the herbs are pressed to get the natural liquid extract. This extract, in which is focused all the bouquet and taste, is mixed with white wine from Tarragona and mistela to have a sweet notes. Then, it rests in barrels of 650 liters for its maturing. Matured in barrels of selected Jerez wine: 30% for 3 years and 70% for at least one year.
